There are several ways:
PC:
You record the gameplay via a recording program while the game is running.
PS2/NGC/Wii/X360/Xbox/PS3/Home Consoles:
You use a capture card which captures the game playing, and makes it into a video file, I don't know much for capture cards as I don't have one, but I know Dot(?) and some other members have them, so they'd help you here.
Me myself, would infact like to know more about capture cards and own one too.
