Personally i wish Capcom had just gagged all these voice and motion actors until the game was out. Most of the stuff they're talking about is likely to go against any pre-release press that Capcom have planned.

While I am of the opinion that the pale, bald man who turns into the giant leech-looking monster and the bald, black man we see with the birdwoman are one and the same (I think his skin just turned pale as a result of the virus, parasite, leeches, or whatever it was that infested his body), I have considered the possibility that, assuming the scene where we see Spencer dead on the floor is a flashback, the pale, bald man is actually a regenerated Spencer.
While I think this would be incredibly lame if true, if you consider how Marcus' leeches rejuvenated his body to the point that he looked far younger than he did when he died, perhaps Spencer had a failsafe in case he was killed (or just died of old age). Having seen how Marcus was resurrected thanks to his leeches, Spencer may have used similar means to ensure his own survival. Granted, Marcus' new "body" consisted entirely of a mass of leeches, while the leech-looking things in RE5 seem to burst out from underneath the pale, bald man's skin, implying that his body was not made up of leeches in the same way Marcus' was, rather his body contained the leeches within it, and they were emerging rather forcefully.
Then again, Marcus vomited up a sizeable amount of leeches before he transformed into the Queen Leech, and his reaction and the look on his face seemed to imply that he had not intended to do so. Some of the leeches may have been acting of their own volition, and that could possibly be the case with the pale, bald man in RE5. It's just a thought. Here's the scene from RE0 again for reference:
