The song called "You Only Live Twice" from the Biohazard: The Umbrella Chronicles Original Sound Track is a direct reference to Bond (considering what is happening when this particular track is played).

I'd say that with RE4/UC Wesker's design, that it makes a fair bit of sense to have had a little bit of Bond influencing his design.

I agree with Gene about the heavy Aliens 'inspirations'... There was also that part in Aliens when Ripley presses the button to call the giant elevator, as the big monster approached.

I'm sure there's a LOT more I could come up with, once I have a good think about it.

I'm surprised nobody has mentioned the latest and probably most obvious of all yet.
The other night I watched 'Black Hawk Down' again (great film, I've seen a number of times). The early part of that film is literally like watching a film based on RE5. The whole scenery (buildings, streets ect. ect.) the black smoke, the natives running around. There's even the 'Agitator' with his megaphone! The only thing missing is the transforming Manji and monsters.
(I did read somewhere that the developers were inspired by the film)

The references in RE4 to "Leon (The Professional)," another Luc Besson film, have been elaborated on before. His protecting a younger woman (Ashley), fits in with those themes, and of course you can unlock the Mathilda handgun (named after Natalie Portman's character in the film).

People have said that the execution of the Gulp Worm & Grave Digger in CV and RE3 respectively is reminiscent of the worms from Tremors.

I forgot all about that! I love that movie. Natalie Portman was so cute in it, and her character's relationship with Leon, the hitman, was so sweet.

Weren't Luc Besson and Milla Jovovich married? :p I find that pretty funny, considering their completely different ties to the Resident Evil name.

The Handcannon in RE4 is a reference to Pulp Fiction when John Travolta's character, 'Vincent', says: "Why the fuck didn't you tell us somebody was in the bathroom? Slipped your mind? Did you forget that somebody was in there with a goddamn hand cannon?".

Damn, I'm gonna have to play RE5 now and check that out...

BTW, "Fat Bottomed Girls" track listing is #2 on the "Jazz" album, kinda threw the order out a bit but still cool nonetheless.

Trophies/Achievements "They belong in a museum" and "Ride The Lightning" are references to Indiana Jones and the Last Crusade and Metallica.

Aside from numerous overtones of Aliens there is also numerous Terminator overtones in RE2 as well, and one of the music tracks by Udea for the soundtrack has the Terminator theme mixed into it played slightly off-key. Starts about 20 seconds in.

Before you all start analyzing screenshots of a shirtless Wesker for hours, I should probably say that I made the Fat Bottomed Girls thing up. Gotcha!

I should probably include smilies or something with my posts to indicate a joke. But on second thought, I think it's better without them. Haha.
                              Mass production? Ridiculous!

Im not sure about this one but I think that Jill alternate costume in RE DS(the policewoman) is based in Lucy Liu costume from this video
