If I had the choice for Capcom to start developing it right now? RE2 Remake. I wouldn't trust Capcom to make RE6, it'll probably be a four player FPS where the main objective is to escort an idiotic and uncontrollable child the whole entire time.

Entirely possible. Unfortunately, given Capcom, it's quite possible that RE2 Remake would be the same. Imagine it now. Leon, Claire, Ada and Ben, armed with the latest in high tech weaponry, must fight there was past monsters and the UBCS and USS forces in a constant onslaught of brutal, fast paced action, while Sherry occasionally walks into a wall or runs towards the roaring killer monster. Only Leon's wit and cunning one liners will keep them all safe, as Claire occasionally gets bored and wanders off and Ada snaps her ankle on the 12 inch high heel she's wearing. And Ben goes and hides.
I like RE2. I like the characters and the gameplay. If they're gonna make a hideous mess of a game I'd prefer it was a new game I already expect is gonna interest me significantly less than what I'm having for lunch will. It will also be interesting to see where they're taking the story, in the hope that they do something interesting...or to see how badly they botch things with the Alex Wesker storyline.
RE6 for definite. Though to tell you the truth, I won't say no to the release of the much requested RE2 remake either! But I doubt that will happen for some reason.

Haha, for sure. It's the same which ever way you look at it. You're right though, it's better to be a new game that people don't mind hating, than a remake of an old game everyone loves. However, Resident Evil Remake is a gorgously stunning game, it looks so much better than the original. Sure it has some inconsistencies and changes a few things, but to have Resident Evil 2 remade in the same standards (presuming Capcom take the effort to pull it off) is something I'm not sure I could pass up... Either way we're screwed, basically lol.
Resident Evil 2 did get a bit of remake attention though with Darkside Chronicles, it was nice to see the 3D envireoments, I enjoyed it.
At this point i don't actually care, RE4 + 5 plus terrible bland spin-offs have pretty much killed any interest i had in what this series still has to offer.
