Leon will join BSAA, cuz his work for US Secret Service is pretty much sealed after he killed the President. Chris will become a BSAA director. Jake will either join BSAA or will try to live a normal life without fighting. Sherry will stay in Secret Service and so will Helena. Piers will be promoted as the captain of his own BSAA team. Chris goes down fighting, leaves Piers in charge (And maybe tells him to look after Claire? Aww.). He also gives Jake words of wisdom about choosing his own fate, not letting his father's deeds overshadow his life blah blah blah. Real Ada shows up to take down Dark Ada/Carla. We find out she was kidnapped by the game's Big Bad (Simmons? Alex? The Organization?) and wasn't responsible for Carla's crimes. Leon resigns to avoid a scandal and finally walks off into the sunset with Ada. Helena dies (I don't know why I feel like she's marked for death. Probably because she reminds me so much of Luis.) Jake and Sherry go off on their own a la the end of Bourne Identity.
Or...what would be even better (but I know Capcom won't do this): Sherry discovers she was being manipulated by the Big Bad all along and wasn't going to be granted her freedom after the mission. She snaps and goes scorched-earth on the conspirators (remember that nigh-invulnerability thing Capcom keeps pushing?). She and Jake take over the Organization and tell the government and the BSAA to fuck off, thereby setting up the next game's conflict.

Regardless, there's no way this much thought and consideration is being put into the story, much less the ending/setting up characters for future games. Details like "what the characters will do now" won't even be addressed in the slighted.

It's really not that complicated how these characters can live on afterwards.
Hell, they may even just take the Rebecca/Billy/Barry route and that will be that. Problem solved.
Like I said, I'm more concerned about the gameplay. I can always watch the cutscenes on Youtube if that's all I care about.Stuff to remember: Avoid forums if you're having a bad day.

I also can't really picture Leon or Chris taking a desk job as a consultant, no matter how old they get. They're pretty much going to have to die on the frontlines. It's just who they are. Does this mean that I think we have to follow their respective storylines until they do? Not at all. In fact, I think Resident Evil 5's ending did an excellent job of providing this sort of resolution for Chris' character. We knew he was going to continue fighting, but we could leave him be without feeling a need to continue witnessing his battles.
Of course, then along came Resident Evil 6, and I think at this point, about the only option left is to kill him.

I don't know why some people aren't completely psyched for RE6. Sometimes I think people forget that, even if they never realized it, Capcom has always given them what they wanted in one fashion or another. RE1/2/3/0 All had improvements and refinements over the previous title that people were bitching about at the time. Personally, I remember many fans getting tired of the tank controls and camera angles (And many other fans who weren't) so they made RE4 that was a good balance between the two. People bawwed about that, How Ashley was so damn useless, how you had too much storage space. RE5 goes back to it's RE1 roots as far as storage and effectively gives "Ashley" a gun. People whine about that, calling him "Chris 'nine-pockets' Redfield", whining about how not being able to move and shoot is stoopid. Seriously, what we SHOULD be focusing on is the fact that (despite dubious translations) Capcom has released epically good titles consistently as far as RE is concerned. All of them have the characters we love, in a universe we've enjoyed for over ten years.
RE6 is going to be amazing, I don't care what the haters say. Anyone who is with me, raise your hand! We'll sit in the corner and anxiously await RE6 together. XDsigpic
