Props to Robert_Kendo, the german RE collector, and VIRGIN KLM from U64 forums!
The game contains the common "debug" folder which contains more files than usual.
It contains first of all the roominfo files from both Gamecube and PS2 versions of the game but surprisingly they don't match AT ALL with the ones on their retail versions.
The Gamecube contains all the ATARI and 3.5 names for rooms (same as E3 Preview version, later removed on retail version), obviously bored to remove them on this release.
The PS2 one seems to contain the ATARI testrooms, as far as I remember they are not referenced on the file inside the PS2 disc since they had no reason to include them.

And here's something hillarious!
Inside the gamedata you can find a Wii (LOL) folder, obviously containing the extra stuff from the Wii version. (But "Wii" on a PS3 console, I mean really?!)
An other thing that enforces my idea that is a cheap and lazy port from a debug Wii version of the game is that picture, you can force the game to show the extra menu with a savegame flaw/hack:
