Why did William Birkin go after Ben?

Alright, I was playing RE2 maybe like a month ago and forgot about this until now.

How exactly did Birkin get into the locked prison cell and why did he go after Ben? It seems throughout the game he wants to infect Sherry since she would accept the embryo...but Ben seems random.

Maybe Ben has changed his mind and decided to find an exit.
And got cornered by Birkin when he tried to go out.

Well, mice can slip through spaces that only their head can fit through, collapsing the rest of their body to slip through. As mutative as the G-Virus is, perhaps those infected have such a mechanic at their disposal.
