Alright, first of all it turns out that there's a lot of weapon data in the demo. It turns out you can actually mod the demo and use these weapons in the demo, including unlockable ones. You can see an example of this in this video: http://www.youtube.com/watch?v=IbtDitAoZ5s

Next up, several multiplayer game modes and their details were revealed. This one won't be marked in spoilers as they don't reveal anything about story or exact specifics, but might be considered as such regardless.
The game's multiplayer modes are:
-Mercenaries: Sure you all know what this mode is. It seems it can be up to 6-player co-op in this game, though.
-Slayers: this is a versus mode that was first seen in Resident Evil 5. In this game they added a lot of rules. Players can modify their stages to even the playing ground, and have ways to block or dodge other player attacks. More so, players can pick up health items as well around the arena, or frame which act as 'armor'. Players also can try and perform what is known as a Boisterous Dance, which allows them to heal some health. However, it cannot be cancelled once it is started and you only get health back when it is completed. You're a sitting duck and if another player attacks you, that is considered a 'failed' dance.
-Last Stand: Not much is known about the mode in details, but it sounds like a survival-based mode.
-Siege: This mode doesn't have much concrete info, but there was data in the demo about gameplay instructions that seems like it may have listed what this mode is about. If the instructions were part of this mode like believed, Siege Mode is a mode where two teams fight control of different 'control points' which they have to stand in to claim. However, various events happen during the game, including enemy rushes, a 'circle of death' appearing and going around the stage, anyone inside it resulting in death, a temporary effect where people in the control point can't shoot their guns, and more. Seems there's several of these points, and this mode might also include the use of vehicles possibly.
And finally...
-Agent Predator: This mode is confirmed to be 8-players and seems to maybe feature one player playing as Ustanak, the giant monster that chases Jake in his game. Not much else is known outside of that.
Ada's Role in the game: Ada Wong has a secret fourth scenario in Resident Evil 6, which includes cutscenes, unique stages, and more. Ada's campaign does have co-op in it, but besides that we don't know much about it. We know she can use her gatling gun and hook shot, and we know that Carla, Ada's clone, is in the game. However, we don't know if Carla and Ada are on good or bad terms, and Ada's partner is simply listed as 'HELPER' in the demo files.
Details about Zombies (some huge surprises included here):
As we all know, zombies are back! But there's more than that. It seems later in Leon's scenario, starting in a gameplay segment where he and Helena crash a bus into a dark and stormy forest, several new gameplay elements with zombies come into play. Leon's stages become more hub-like and explorable, and with this zombies bodies will remain motionless on the ground. However, if you leave a body alone for to long and approach it again, the zombies will rise again as Crimson Heads. Yes, Crimson Heads are back! Zombies also have a few different varieties. Some can spit acid. Some wear hard hats or bullet-proof vests. Some carry weapons (we know they can carry pipes, sticks, axes, machetes, hatchets, and knives). There are some context-sensitive zombies, like there is apparently a 'hanged-man' zombie who hung himself but is still there as a zombie, or other types of zombies such as fat zombies or zombies on fire. There also is a new type of zombie called a 'Screamer'. These sound like they work a lot like Redeads from the Zelda series, and can stun with their screams.
The game also has more options than what weh ave in the demo. While not full details of these options are known, they are titled as:

Unlockable Spoilers: You also seem to be able to unlock infinite ammo again in this game for weapons, like in RE5.
More on menu and option stuff, the game has menus for Records, Collection, Cutscenes, Mercenaries mode, Slayers mode, Last Stand mode, Agent Predator/Ustanak mode, and Siege mode. In the Records menu, it seems to work like RE5 where it keeps track of your data. It has three main things to check, which is 'Common', 'Weapons, and 'Enemies'.
Another thing is that this game seems to have something you can turn on/off called 'No Hope', but it isn't clear what this is. Might make the campaign more difficult? It isn't a difficulty setting but might rank up the difficulty in some other way.
The game also has a few extra diversions during the campaigns. There's several puzzles that seem to be in the demo file, and a couple things simply labelled as 'Mini Games'. The game also has four vehicles we'll get to drive during the game:
-A Bike
-A Snowmobile
-A Jeep
-A Harrier
The demo includes data on several enemies, but is limited to code-names and brief information in their programming. A few that we can discern besides the obvious (like zombies) includes:

-Face Huggers: An enemy that latch onto the player. Seem to be related to J'Avos

-Dogs: Dogs as well.
-Fly: These are the J'Avos that turn into flying enemies. Later in the game, they can pick up items in the environment (like bombs) to throw them, or press levers to make life harder for you.
-Spiders: These are J'Avos that take on more spider-like properties. They can walk along walls and ceilings. They can break through ducts and leap at the player and pin them down with their strong legs. They also have a mode where they'll 'creep' up on you from the ceiling and then hang down and attack you. They also seem to be able to grab a player and pull them elsewhere, to get them away from their partner to essentially eat them.
The rest don't have names but have some details.
-There's these monsters that seem to have a weak Abdomen but a lot of armor elsewhere. I believe these may be the enemy we see charging at Chris in the E3 demo that runs on four legs and looks like a kind of J'Avos. Apparently you can get a prompt to ride the back of the creature if you can hang on, and knock it into something to expose it's weakpoint, its heart.
-There seems to be a monster with regenerating limbs that sounds like it may be insectoid as it has 'feelers' listed as one of the part of its body it can regenerate (legs, arms, head, feelers).
-We have a big enemy that we saw in the story trailer that has a lot of tumors on it and emits gas. This enemy emits gas, which can be deadly and can reanimate bodies.
-It seems there's these enemies called 'Sanagi'. These seem to be 'BORN' from cocoons, and if you destroy the cocoon before it's born you won't have to fight it. However, the enemies once born must be fought. Fun fact, Sanagi mean "chrysalis", or "pupa" in Japanese.
We also have a few enemy nicknames with no info on what they are. These include:
-Needler
-Rasklapanje
-Slider
-Decoy
-Kong
-Shell
The demo has data for the 'Join Game' option when you join another players game. This includes the typical data, including displaying the players name and the option to join or not, but most interestingly is that it has data to display which stage the player is playing. The game splits it's stages into 'Chapter - Stage - Scene'. This is just like RE4 and RE5, where you have a chapter and stage (like 2-1, a chapter and then a stage) and the current 'scene' (loadable area, like chapter 1-1 in Resident Evil 5 has four 'scenes', the beginning walk with all the civilians, once you get your guns, once you meet the first enemy and hide inside the house from the large crowd, and public assembly).
According to the demo, the game has 28 stages. These likely will be split among the campaigns and chapters.
